Vegetarian Mulligatawny Soup

Ingredients

4 portion(s)

  • 150 g onion large
  • 35 g Butter
  • 2 tsp Curry
  • 1 tsp chili flakes
  • 100 g Celery
  • 100 g carrots
  • 230 g potato
  • 150 g cauliflower
  • 150 g frozen pineapple and peach chunks
  • 120 g chopped skinned tomato
  • 60 g spouted brown rice
  • 1 bay leaf
  • 1 can coconut milk (80 g)
  • 2 tbsp TM Vegetable Paste
  • 4 tbsp chopped coriander
  • 600 g water
  • 80 g cream

Recipe's preparation

    Saute onion
  1. 1. Place onion into bowl, chop 3 seconds, speed 5. Scrape down sides.

    2.

    Add oil sauté 3 minutes, 100c, speed 1.

    Add curry and chili flakes and cook 1 minute, 100c, speed 1.  Set aside.

  2. Chop vegetables and cook

    Place potato, cauliflower, carrots, celery and frozen pineapple and peaches into bowl.  chope 5 seconds at speed 5. 

    5.

    Add onion mixture, tomatoes, spouted brown rice, coriander, coconut milk, TM vegetable paste, 1 bay leaf, water to bowl, 25 minutes 100c Counter-clockwise operation speed 2.

    6.  Add cream 2 minutes, 100cCounter-clockwise operation speed 2.
