Waitangi Day Watercress & Kumera Soup

Ingredients

6 portion(s)

Soup

  • 400 g water
  • 1 heaped tablespoon TM stock
  • 60-100 g Watercress, washed
  • 2 spring onions/shallots
  • 30 g Butter
  • 2 medium Kumera, peeled and roughly chopped
  • to taste salt and pepper to taste
  • 100 g full cream milk
  • 1 large onion, peeled
  • 1 Large leek, washed
  • 1-2 cloves garlic, peeled

Recipe's preparation

    Soup
  1. 1. Add onion, garlic and leek and chop on speed 6 for 3 seconds.

    2. Add butter and saute for 1min/100c/speed 1.

    3. Add water and kumera and TM stock and cook for 15-18 minutes/100c/speed 2.

    4. Check kumera is cooked then add salt and pepper to taste.

    5. Add watercress, reserving a few leaves for garnishing and cook for 3 min/100c/speed 2.

    6. Add milk and stir for 1 min/speed 2.

    7. Puree slowly from speed 1-9.

    8. Serve in soup bowls and garnish with watercress and a swirl of cream (or sour cream).

Tip

Watercress is related to mustard and has a slightly bitter, peppery flavour and is highly nutritious, containing significant amounts of iron, calcium, vitimins A,C & E.

This soup will keep in the fridge for up to 3 days and is actually very tasty served chilled.
