Soup Ingredients

  • 1 medium brown onion, halved
  • 20 grams Butter
  • 3 rashers bacon, roughly chopped
  • 1 mediumm potato, roughly chopped
  • 500 grams zucchini, roughly chopped
  • 1 level tablespoon EDC vege stock
  • packet chicken noodle soup
  • 500g water

Recipe's preparation

  1. Place onion and bacon into bowl, chop 3 seconds speed 7.

  2. Add butter and saute 3 mins veroma speed 1

  3. Add zucchini and potato and chop 10 seconds speed 7.

  4. Add chicken noodle soup, stock and water. Cook 20 mins/ 100 / speed 1.

  5. Blend 1 min/ speed 9 gradually increasing speed.

    My family really enjoyed this. Like others, I omitted the packet soup mix and just added another tablespoon of EDC veg stock paste.

    A nice soup. I made it without the packet soup and didn't have EDC stock so I just used 2 chicken stock cubes. For me it was missing a little something so next time I think I will add some herbs. Not sure what yet though maybe basil or parsley.

    Great recipe and super easy, thank you! We also substituted the chicken noodle soup for 1 generous tbs of Quirky's chicken stock paste and the potato for a small white sweet potato.  We then garnished with sliced spring onion and crispy bacon bits, fried in butter.. Yum!

    We used Quirky Cooking Chicken Stock instead of the packet chicken noodle soup and I didn't have enough zucchini so I added peas and it was still great.  Thanks heaps for a fantastic recipe.  Will be making again xx
