Chillied Corn Fritters

  • 1 birdeye chilli
  • 2 eggs
  • 75 grams Self Raising Flour
  • 420 grams Creamed Corn
  • 75 grams corn kernels (frozen)

Recipe's preparation

    Chillied Corn Fritters
  1. Chop chilli 10 Seconds, Speed 7 until minute fragments.

    Scrape down. Repeat.

    Add eggs 10 Seconds, Speed 6.

    Scrape down sides

    Add flour 10 Seconds, Speed 6.

    Scrape down sides

    Add creamed corn 10 Seconds, Speed 6.

    Scrape down sides

    Add and frozen corn kernels, combine 10 Seconds, Counter-clockwise operation, Speed 2.

    Set aside for 10 Minutes (infuses flavour).

    Place a tablespoon of mixture into a hot none stick frypan and cook for 2-3 Minutes on each side until well browned.

     

    Serve Plain or with Sweet Chilli Sauce and Sour Cream.

Tip

Oven temperatures are for conventional; if using fan-forced (convection), reduce the temperature by 20˚C.

I use Australian tablespoons and cups: 1 teaspoon equals 5 ml; 1 tablespoon equals 20 ml; 1 cup equals 250 ml.

All herbs are fresh (unless specified) and cups are lightly packed.

All vegetables are medium size and peeled, unless specified.

All eggs are 55-60 g, unless specified.
