Gluten Free Chicken Liver Parfait

  • 600g chicken livers, trimmed of any gristle
  • 60g unsalted butter for frying
  • 1 shallot
  • a few sprigs parsley
  • S&P
  • 1 pinch ground allpsice
  • 50ml sherry
  • 4 heaped tbsp double cream
  • 1 teaspoon lemon jiuce
  • small spoonful of caster sugar, if you prefer a sweeter taste

Recipe's preparation

  1. Drop the onion and parsley into the spinning TM bowl to chop.

     

    Add a small dollop of butter to the TM bowl. Make sure that the chicken livers have no gristle and add them to the onions. Cook for about 5 minutes/90/S3.

     

    Add the allspice and S&P to taste. Blend for 1 minute/S5 and scrape down the sides.  Gradually add the cream, port and sherry to bowl with the blade spinning at ~ 3 until the desired consistency is reached.  If the mixture is becoming too loose, add less moisture.

     

    Finally add the lemon juice and caster sugar (if using)  and add the butter and blend again for 30 seconds/S3.5, but for a less rich parfait you can omit the butter.

     

    Divide the parfait between ramekins or dishes of your choice.

     

    Cool in the fridge before serving.

     

    Serve with GF bread or crackers and a nice fruity chutney.

Tip

you can add clarified butter and pink peppercorns to the top if you want to make it more formal for a dinner party.
