Brigilla - Maltese Broad Bean Dip
- 450 g broad bean, dried
- 100 g broad bean, fresh, reserve for decoration
- 2 tablespoons fresh parsley
- 2 tablespoons fresh mint
- 1 tablespoons fresh marjoram
- 1 chilli, fresh, cut in half, deseeded
- 2 cloves garlic
- 2 tablespoons olive oil, plus extra to serve
- 1 lemon, zest and juice.
- 1 tsp cumin seed, ground, optional

- Soak dried broad beans overnight. Discard water
Add beans to bowl add 500gms water 10 min 100°C
"Counter-clockwise operation" speed 1 until cooked.
Drain well and set aside to cool.
Add Pasley, mint, marjoram chilli, garlic and lemon peel chop 20sec/ speed 8
Scrape down the side of the bowl.
Add 2 tbls olive oil, Saute 3 min 100°C /speed 1.
Add cooked broad beans, oil, lemon zest and juice, Season with Salt & Pepper Chop 30sec /speed 7
Scrape down and repeat until smooth.
Adjust consistency add a splash of lemon juice or oil, Blend again.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -
