Ingredients

Brigilla - Maltese Broad Bean Dip

  • 450 g broad bean, dried
  • 100 g broad bean, fresh, reserve for decoration
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh mint
  • 1 tablespoons fresh marjoram
  • 1 chilli, fresh, cut in half, deseeded
  • 2 cloves garlic
  • 2 tablespoons olive oil, plus extra to serve
  • 1 lemon, zest and juice.
  • 1 tsp cumin seed, ground, optional

Recipe's preparation

    Step 1
  1. Soak dried broad beans overnight. Discard water

    Add beans to bowl add 500gms water 10 min 100°C Counter-clockwise operation"Counter-clockwise operation" speed 1 until cooked.
    Drain well and set aside to cool.

    Add Pasley, mint, marjoram chilli, garlic and lemon peel chop 20sec/ speed 8

    Scrape down the side of the bowl.

    Add 2 tbls olive oil, Saute 3 min 100°C /speed 1.

    Add cooked broad beans, oil, lemon zest and juice, Season with Salt & Pepper Chop 30sec /speed 7
    Scrape down and repeat until smooth.
    Adjust consistency add a splash of lemon juice or oil, Blend again.
