- 50 g pistachio, chopped
- 400 g sweet potato
- 3 cloves garlic clove
- 10 g lemon, zest
- Tin Chickpeas
- 25 g quinoa flake
- 1 tbsp tahini
- 1 tsp paprika, sweet, smoked
- Salt to taste
Scrub Kumara and cut into cubes to fit into steaming basket. Place 500 ml water in jug and steam 20 min varoma temp sp 3.
In the meantime place Pistachio in cold oven and dry roast for 8 min on 180 deg or until desired colour. Mill 10sec on sp 10 and set aside.
Once Kumara is cooked, set aside to drain. Dry bowl, add lemon zest and garlic and chop 5 sec on sp 7. Add back kumara, chickpeas, tahini, lemon juice, quinoa flakes, smoked paprika and salt.
Mix till smooth on sp 5, roll into small balls adding a piece of Feta into the centre of each ball. Roll into pistachio crumbs to coat.
