Ingredients

Lobster mousse

  • 125 g Raw Lobster Mousse
  • 125 g Raw white fish fillet
  • 1 Egg white only
  • 250 g double cream
  • 1 tsp sea salt flakes
  • 12 Zuchini flowers

Capsicum essence

  • 150 g Chargrilled capsicum (skin and seeds removed)
  • 25 g white wine vinegar
  • 10 g olive oil
  • 100 g water
  • 1 tsp TM vegetable concentrated stock
  • 1 tablespoon tomato paste

Recipe's preparation

    Lobster mousse
  1. Combine lobster, fish and egg white in TM bowl and mix for 5-10 seconds/speed 7. Scrape down sides and mix for 4 seconds/ speed 7. Add cream and seasoning and mix for 4 seconds/speed 7. place mixture into piping bag. Remove stamen from flowers and pipe mixture into flowers. Grease Varoma tray and place flowers on tray.

  2. Capsicum essence.
  3. Clean and dry TM bowl. Add capsicum, vinegar, oil, water and stock concentrate. Put varoma ontop of machine and cook for 6minutes/ varoma temperature/speed 1. place varoma to the side. add tomato paste to tm bowl and blitz for 9 seconds/speed 9.

Tip

Place a dollop of essence on plate and run spoon through it to form swipe. Brush flower with a little olive oil to give it a shine and put on plate. sprinkle with a little sea salt.
