Corn and Potato Soup

  • 1 onion, peeled and cut in quarters
  • 1 cloves garlic, peeled
  • 20 g olive oil
  • 1 cans corn kernels, drained
  • 650 g potaoes, peeled and cubed (~2cm)
  • 300 g Milk
  • 300 g water
  • 1 heaped tsp vegetable stock
  • 2 pinches paprika, or to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Method
  1. 1. Add onion and garlic to the bowl. Chop speed 7 for 5 seconds.
    2. Scrap down bowl. Add oil and saute speed 1 for 90 seconds
    3. Add corn, potatoes, milk, water, stock and paprika and cook speed 1, for 30 minutes at 90 degrees C
    4. Add cream and mix spead 1 Counter-clockwise operation for 30 seconds

    We liked the soup. Next time I will use a small onion as the onion had a dominant flavour. Might also use a can of creamed corn as well as the kernels. Plus I would stir the soup 1/2 way through cooking to ensure even cooking of the potato.
