Ingredients

Muffin mix

  • 100g Butter
  • 60g oil (vegetable or extra light olive)
  • 310g Milk
  • 2 eggs
  • 250g self-raising flour
  • 130g brown sugar
  • 50g cocoa powder
  • 75g White Chocolate Chips
  • 75g milk chocolate chips

Recipe's preparation

  1. Add 100g Butter and melt for 2 min/90°C/speed 2
  2. Add 60g oil, 310g milk, 2 eggs and mix 10 sec/speed 4
  3. Add 250g SR Flour, 130g brown sugar, 50g cocoa powder and mix 6 sec/speed 4
  4. Scrape down sides of bowl and mix 5 sec/speed 4
  5. Add 75g milk choc chips and 75g white choc chips. Gently stir in with spatula for a few seconds.
  6. Divide mixture evenly into muffin trays sprinkle each muffin with a few extra choc chips.
  7. Bake for 20 mins on 180C.
