- 50 g Desiccated Coconut
- 50 g almonds
- 200 g zucchini, chopped
- 2 eggs
- 1/2 teaspoon cinnamon, optional
- 1 teaspoon honey, optional, adds just a touch of sweetness.

Grind the almonds and coconut for 10 secs./speed 10.
Add the zucchini and puree for 5 secs./speed 10.
Add the egg, cinnamon and honey and mix for 5 secs./speed6.
Bake for 15-20 minutes until set at 170'C if fan forced or 180'C if not.
