Ingredients

Mini Muffins

  • 200 g bacon
  • 200 g Cheese (tasty)
  • 250 g Milk (light or full cream)
  • 1 egg
  • 270 g plain flour
  • 2 heaped teaspoons baking powder

  • salt and pepper to taste
  • parsley
  • Thyme

Recipe's preparation

  1. Preheat oven to 180 degrees.

     

  2. Place bacon and cheese in bowl. Blitz for 6 sec, speed 5.

     

  3. Add all other ingredients. Counter-clockwise operation"Counter-clockwise operation" 14 sec, speed 4.

     

  4. Divide mixture into greased mini muffin tin or silicone form. Makes approx. 24.

     

  5. Bake in oven for 15 minutes or until golden brown.

     

Tip

You can add salt and pepper to taste or some fresh herbs, like parsley or tyme. Simply blitz these herbs in the bowl before adding the bacon and cheese.

These freeze really well for school lunch boxes. They'll be defrosted by morning tea time!

These can also be made as larger muffins, just increase cooking time slightly, approx 15-20 minutes. Makes 12.

    these were a hit in my house, and i like that the cheese and bacon were chopped together to leave the bacon in decent sized chunks. I might even try heating in the mircrowave for a few secs to give it some warmth

    Very nice but needs something that I can't put my finger on. A little bland so will work on it. But it's still a good lunch box food.
