Banana brioche

Ingredients

  • Milk, to make up 300g
  • 1 tsp sea salt
  • 1 egg
  • 2 sachets dried yeast (14 g) or 30 g fresh
  • 550 g baker's flour
  • 30 g sultanas (optional)
  • 2 bananas
  • 1 heaped tablespoons honey

Recipe's preparation

    Method
  1. Pre-heat oven to 180°C.

  2. Weigh bananas, honey, lemon juice into the TM bowl. Note their weight. Next, watching the scale weight measure, pour milk into mixing bowl until the weight reaches 300 grams in total. Mash this mixture for 20 seconds / 37°C / speed 4. Heat 1 min/37°C/speed 1.

  3. Add all remaining ingredients, except sultanas, and knead 3 min/Closed lid/Dough mode adding sultanas (if using) in the last 20 seconds.

  4. Remove dough and place into a floured bowl.  Set aside in a warm area to prove for 30 - 40 minutes, or until  dough has doubled in size.

  5. Knock down dough and place into a large, greased bread tin.  Set aside to prove until doubled in size again, or until dough fills the entire tin.

  6. Once risen, brush dough with egg wash and place in the oven to bake for 45 minutes, or until golden brown.

Tip

This banana bread is superb, crunchy on the outside, and moist on the inside, with a great lemony banana tang. Serve with cream or butter and honey or jam or with your favourite cream cheese.  It could also be topped with icing to make a banana cake. Delicious on its own. This brioche would also make a fantastic bread and butter pudding.
