Broccoli and quinoa flour quiche

  • 250 g quinoa
  • 100 g Butter, room temperature
  • 50 g water
  • 1 egg
  • 1 teaspoon baking powder, (gluten free if required)
  • 1 pinch salt
  • 1 pinch sugar

Filling

  • 1 onion, halved
  • 200 g broccoli, roughly chopped
  • 250 g smoked turkey bacon, (or regular bacon)
  • 150 g sour cream
  • 3 eggs
  • 1 teaspoon TM vegetable stock
  • 20 g cornflour
  • grated cheese, to taste, optional

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pastry
  1. 1. To remove the saponins from the quinoa, either toast it in a pan or the oven, or cook in the Thermomix for 10 minutes at 120 degrees (or Varoma for TM31) on Reverse, speed 1.  (Saponins are a natural bitter coating on the grain that you usually rinse off, but in this case we don't want it wet).  

  2. 2. Preheat oven to 180 degrees, and grease a pie tray or quiche tin.

  3. 3. Put toasted quinoa in mixing bowl and mill on speed 10 for one minute.

  4. 4. Add butter, water, egg, baking powder, salt and sugar and mix for 30 seconds on speed 6.

  5. 5. Tip the dough into the greased tray.

  6. Filling
  7. 1. Put onion, broccoli and bacon in bowl and blend for 5 seconds on speed 5.

  8. 2. Saute for 5 minutes at 120 degrees Counter-clockwise operation speed 1

  9. 3. While mixture is sauteing, press the dough out evenly on the base and sides of tray using your hands.  

  10. 4. Add sour cream, egg, stock and cornflour and mix 30 seconds, Counter-clockwise operation speed 3 

  11. 5. Pour filling onto quinoa base, top with grated cheese if desired, and bake for 30 minutes at 180 degrees, or until set.

  12. 6. Serve warm.

Tip

Suitable for both TM5 and TM31.I saw this recipe on the Thermomix Mexico site and my daughter translated it from Spanish for me.  It's delicious and the quinoa makes a beautiful gluten free pastry.

    Love this I will def make again!
    Subbed some cauli to make up the broccoli as did not have enough. No bacon but added a tin of salmon. No butter so subbed with coconut oil and no sour cream Toppedso used 100g cream. Did 30g cornflour as was worried it might be too runny after my changes, with bit of cheese, perfect!

    Really enjoyed your recipe! I changed the sour cream to coconut cream as that's all I had and it worked well!
