  • 3 carrots
  • 1/2 cup frozen peas
  • 1/2 Cup Frozen Corn Kernels
  • 2 spring onions, chopped
  • 100 grams cheese, cubed or grated
  • 2 eggs
  • 100 grams self raising flour
  • 1/4 cup milk
  • 20 grams butter
  • pinch salt and pepper to taste
  • 25 grams oil

Recipe's preparation

    Method
  1. 1. Fill the TM bowl with 1.2 L of water.

    2. Add potatoes and other diced vegetables (carrots, peas, corn) to the varoma and cook 25 mins/varoma temp/speed 2.

    3. Once cooked leave vegetables in the varoma to cool or run cold water over vegetables until cold.

    4. Empty water from TM and add cold potatoes, butter and milk to the bowl and mix for 30 secs/ speed 4. Scrape down sides of bowl and mix for another 30 secs / speed 4. Check mixture for a smooth consistency, if lumps remain mix for another 30 secs.

    5. Add remaining ingredients in the following order: spring onions, cheese, flour, salt and pepper, cooled vegetables, eggs.

    6. Mix for 30 secs Counter-clockwise operation/ speed 3. Scrape down side of bowl and repeat step 6 if required.

    7. Heat oil in a frypan and once hot add large spoonfulls (approx 1/4 cup) of mixture to the pan.

    8. Flip once a crust has formed and cook on reverse side.

Tip

This is a great recipe for using up left over vegetables. Any vegetables can be used as long as there is at least 1 cup of mashed potato.

 

Serve Bubble and Squeak with meat or other main meals, or as a breakfast side dish with poached eggs, sausages and bacon. Add your favourite condiment, tomato sauce or relish.

 

Try replacing vegetables with 1 cup diced uncooked tomatoes and 1 cup chopped ham for breakfast.

    I jumped straight to oven from above comment. Used frozen veggies and all ingredients and mixed reverse doe ages. Looks great. This is what happens when you cook at 4am. Sometimes laziness really does pay off

    I struggled with this in the frying pan but baked the remainder in the oven at 200c for about twenty mins and it came out beautifully!!!
