Recipe's preparation
1. Add yogurt, oil and egg to Thermomix bowl and mix for 5 seconds on speed 4.
2. Add flour, baking powder, salt and cheese and mix for 10 seconds on speed 4.
3. Spoon into two mini muffin tins (that holds 24 muffins).
4. Bake at 200 degrees for 20 minutes.

Tip
Instead of using cheddar cheese you can use a mixture of cheddar, parmesan and fetta. You can also add three rashers of bacon, cooked and diced.

The last batch I wanted to make was with chives and feta. As I did not have enough yoghurt left (I thought 1kg of yoghurt is 2x 500 grams but I barely got 750 grams out of the packet!), I added light philedelphia cheese and hi lo milk to get 500 grams in total.
As I did not concentrate, the vegetable oil slushed out to 50 grams (oops) so I used 350 grams of flour rather than 330 grams.
I made another tray of mini muffins which, with this adjusted consistency, needed 30 minutes on 200 degrees.
They came out very well and they are a treat with (Thermomix prepared) chilli jam.
The left over dough I transferred to a bread tin, which I baked for 40 minutes. When cooled down I sliced it and put those slices sealed in the freezer: nice for future lunch with a salad.
Yesterday I stuck to the
Yesterday I stuck to the instructions of the recipe. Today I did some experimenting: 170 grams of cheddar cheese I replaced by a mixture of semi dried tomatoes, feta- and cheddar cheeses.
The 30 grams of vegetable oil I replaced by 15 grams of garlic olive oil and 15 grams of vegetable oil.
Delicious, absolutely delicious.
I have never really been a cook: I cook to eat whilst my husband cooks to create and to surprise. Thank goodness he only cooks in weekends. Since working with the Thermomix I thoroughly enjoy cooking and I find it the best way to relax after lots of hours of "brain work".

Your suggestions sound great! This is a family recipe that remained unaltered for about 20 years until my husband got hold of it and started experimenting.
I think a tomato muffin with bacon and basil might be a nice little pizza version.

Today I made the yoghurt and cheese muffins - what a treat. I made mini ones for finger food and conventional size for a three o'clock snack. I will share the recipe with my daughter in law as her toddler will love them.
Tomorrow I'll make them again but will mix fetta and cheddar and I also bought a bunch of chives.
I also got semi dried tomatoes to combine those with feta.
All very exciting.

Interesting to read your tip: did you try to make tomatoe bacon muffins? I did those today (coconut flour gives a different consistency) and added cajun pepper - a lovely spicy after taste.

Thanks for the recipe - tasted great! Had to substitute egg for an extra 60g oil due to egg allergy at my kids' school. Added spring onion, cayenne and paprika and it worked well.
