Chicken and Vegetable Sausage Rolls

  • 70 g fresh breadcrumbs
  • 500 g chicken mince
  • 1 egg plus 1 lightly beaten
  • 1 zucchini, cut in half then in thirds
  • 1 carrot, cut in half then in thirds
  • 1/2 onion, cut in 4 pieces
  • 1/4 cup Coriander Leaves
  • 1/4 cup Flat leaf Parsley leaves
  • 4 sheets frozen puff pastry
  • 1 tablespoon sesame seeds

Recipe's preparation

  1. Preheat oven to 200°C and line 2 baking trays with baking paper
  2. Chop herbs 3 secs/speed 7. Remove from bowl and add to large bowl
  3. Grate zucchini 5 secs/speed 5. Remove zucchini and add to herbs
  4. Grate carrot 5 secs/speed 5. Add to zucchini and herbs
  5. Grate onion 7 secs/speed 5. Also add to vegetables and herbs
  6. Rinse and dry Thermomix bowl
  7. Add chicken mix, breadcrumbs and 1 unbeaten egg. Process 7 secs/speed 3. Scrape down sides of bowl and process for a further 3 secs/speed 3
  8. Add chicken mince to bowl with vegetables and herbs along with seasoning and mix well
  9. Cut defrosted pastry sheets in half. Spoon an eighth of the mince lengthways down the centre of each piece. Brush 1 side of the pastry with the beaten egg. Fold the unegged side of the pastry over and tuck in beside the filling to make a roll. Roll it over onto the egged side of the pastry and press down lightly to seal
  10. Cut the rolls into 3 and place 2 small incisions in each roll to stop splitting. Place on the baking sheets, cover and refrigerate for 30 minutes
  11. Brush the top of each roll with some of the remaining beaten egg and sprinkle with sesame seeds
  12. Bake for 25-30 minutes until sausage rolls are lightly browned and cooked through. Serve with sauce of liking
