Chicken, Cheese & Pork Sausage Rolls

Ingredients

Filling

  • 500 grams chicken breast, slightly frozen will mince better, Cut into 3cm chunks
  • 4 pork sausages, Remove mince from casing
  • 1 carrot
  • 1 zucchini medium
  • 1 onion
  • 200 grams Cheddar cheese, Cut into 2cm chunks
  • 200 grams bread crumbs
  • 1 egg
  • 2 level tablespoon Chicken or Vege Stock Paste

Pastry

  • 5 sheets Ready made puff pastry, Cut each sheet in half now giving you 10 rectangles to fill with sausage filling.

Egg wash

  • 1 egg beaten, for brushing over pastry before baking

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Filling -
  1. Preheat oven to 200 degrees

    Hand chop carrot, zucchini, onion into chunks, add to thermomix bowl, add cheese and select 5 secs, Spd 6, scrape down bowl & repeat if wanting a finer chop. Set aside. No need to wash bowl.

    Add chopped chicken and pork sausage filling to thermomix bowl and mince 6 sec, Spd 7.

    Remove half of the now minced meat & set aside. 

    Add half of the chopped vege & cheese mix to the meat mince along with the egg, stock paste & half of the breadcrumbs. Mix 5 secs, Spd 4, remove mix to a large bowl.

    Add the other half of minced meat, vege, breadcrumbs & combine 5 secs, Spd 4.

    Remove mix and place into bowl with the other half of combined filling ingredients. Give a quick hand mix to incorporate altogether.

    Lay out 5 x puff pastry sheets and cut each square sheet in half to create 10 rectangles.

    Place filling mixture down the centre of the rectangle, roll up, cut into 3rds & pop onto baking tray. Lightly brush with beaten egg.

    Bake 200 degrees for 30 minutes.

Tip

Can easily sub veges with what ever you like, sometimes I add mushrooms & spinach. Can also use physlium husk instead of breadcrumbs in the same ratio.

    I made them in my sausage roll maker, they were a bit dry (this could be because it was my first time using the sausage roll maker). I used pork mince, which would also make them drier. I added some sweet chilli and honey to the 3rd batch I cooked and they were delicious.

    Super yum!!! I couldn't find pork mince so had chicken mince and some pork sausages and found this little gem of a recipe! Really nice change and not nearly as oily as normal sausage mince!
