- 200 grams water, Lukewarm
- 1.5 tablespoon Yeast, Dried
- 1 tablespoon sugar
- 1.5 teaspoons salt
- 4 tablespoon olive oil
- 320 grams bakers flour
- 1 teaspoon Bread Improver (Optional)

- --- dried italian herbs
- Butter (Approx tablespoon)

Recipe's preparation
Add water, yeast, sugar, salt and oil to TM bowl. Mix 30 seconds speed 3. Allow to rest in TM bowl 5 mins, should be slightly frothy.
Add bakers flour and bread improver (if using). Mix 30 seconds speed 5.
Knead 8 mins. Dough should be soft, a little sticky and very elastic.
Place dough into a bowl, cover with cling film. Allow to prove in warm place until doubled in size.
Divide dough into 4 portions. stretch out to make 4 long loaves approx 9 inches long. Place on baking paper, at least 2 inches apart.
Sprinkle with dried Italian herbs and a little grated cheese. Allow to prove again until doubled in size. Whilst on second prove, preheat oven to 180 degrees.
Bake in 180 degree oven for 20 minutes. Remove from oven and place loaves on cooling rack. Lightly rub a little butter over the top of each loaf. Cover loaves with a tea towel while they cool. This last step ensures perfectly soft Subway style bread.
Tip
Stay close to TM while kneading, to ensure it doesn't 'walk' off the bench.
Some have been finding the dough too sticky when using my original recipe. I have edited my original recipe to include a little more flour. The 320 grams of flour now listed should deliver a sticky dough that you can stretch into long loaves. Sprinkle with a little extra flour when working with dough if necessary.
I prove my bread on the middle shelf of a cold oven, with a tray full of boiling water on the bottom shelf (Thanks Thermomumma)
For plain white Subway style bread, just leave out Italian Herbs and Cheese.

Great easy recipe. Kids loved helping and seeing us make 'subway' at home. My fan forced oven was too hot and next time I will reduce the heat to 160 degrees. Will definitely make these again. I also really appreciated the tips you've included to help get a great result every time. Thank you!

These came out great - OK, I slightly over cooked one of them and I haven't quite got my bread rolling technique worked out, but they still tasted great (and I know I can improve my end). And hubby came home at lunch time after a morning volunteering and asked why the hosue smelt like Subway!
I don't know what I'm doing
I don't know what I'm doing but I just can't get these right. My rolls seem to rise horizontally during the 2nd rise rather than vertically. The taste okay but I'm obviously just not cut out to make bread. I've tried as per recipe and adding the extra flour.

I have amended the original recipe as most people were adding the extra 50 grams flour anyway. If you use 320grams flour from the start, you should still have a sticky dough, but you'll be able to work with it to form/stretch the loaves.
Prove your loaves on the baking paper/trays you intend baking them on, with sufficient gap between them.
All ovens are different - some run hotter, others cooler. Just adjust timing depending on what you know about your own oven.
These rolls still taste great the following day, which is unusual for bread you bake at home. They are great for lunch boxes and freeze well too.

Thank you, great recipe. Adding the 50 or so grams of flour when kneading worked out perfectly. I baked them for around 17 mins. Everyone's oven is different so I'm guessing the times will vary.

Great recipe. Tastes wonderful, but only needs 8 minutes or so in the oven. Mine were burnt after 10, so luckily I checked or after 20 minutes they would have been inedible.

Added extra flour as per the instructions and they are amazing. Yep the dough is wetter than I am used to but it was still possible to roll/shape them on a silicon mat. As for the taste and texture... My four year old picky eater just yelled, "I love you Mum!" Says it all really.

Yep, the measurements are correct, it is a really sticky dough. It wouldn't hurt to try an extra half cup of flour, maybe, if you're having problems. I personally find working with dough can yield different results on different days. Also, I wasn't able to 'roll' my loaves, I stretched them into the loaf shape. Hope you have better luck next time!

Great recipe, made this up yesterday just for a trial run. I added the herbs while the dough was kneading, this enables the flavour to go through the rolls.
Followed the recipe exactly,
Followed the recipe exactly, found the dough really sticky and wet. Persevered and although mine were a little flat (I think that had more to do with my proving) the taste was delicious and they were just like the subway rolls. Keen to see others comments or tips re: dough handling because I would really like to perfect these. Thanks for the recipe
