Ingredients

Crab & Feta Mini Quiches

  • 50 g Parmesan cheese, chopped into 2cm cubes
  • 50 g Colby or Mature Cheddar Cheese, chopped into 2cm cubes
  • 1/2 red chilli, Optional
  • 2 cloves garlic
  • 1/2 red capsicum, Seeded and roughly chopped
  • 1/2 green capsicum, Seeded and roughly chopped
  • 4 Small button mushrooms
  • 50 g olive oil
  • 200 g king crabmeat, Shredded, tinned, frozen or fresh
  • 2 eggs, Cut into 1cm cubes
  • 100 g feta cheese
  • 1/2 lemon, Juiced
  • 1/2 Cup of Pranko Crumbs, Or fresh Breadcrumbs (EDC)
  • 2 Spring onions thinly sliced
  • 3 sheets Frozen Butter Puff Pastry, Pampas, Just thawed.
  • sea salt & pepper to taste

Recipe's preparation

    Crab & Feta Mini Quiches
  1.  

     

    1. Pre heat oven to 200ºC.

    2. Place Colby and Parmesan Cheese into TM bowl and grate for 6-8 secs on Speed 8.

    Set aside. Rinse bowl.

    3. Place chilli and garlic into TM bowl and chop 3-5 secs at Speed 7.

    4. Add red and green capsicum and mushrooms to bowl and set dial to

    closed lid Closed lidand Turbo 1-2 times so mix  is roughly chopped.

    5. Add 20g Olive Oil and sauté for 2 minutes at 100ºC  ReverseCounter-clockwise operation/Speed 2.

    6. Add Cheese mix, eggs, lemon juice and feta cheese cubes and mix 

    4-6 seconds at Speed 4.

    7. Use the spatula to assist in scraping the mixture into a large bowl.

    8. Add  breadcrumbs, salt & pepper, Crabmeat and spring onions and mix 

    through gently with spatula.

    9.Roll out a sheet of puff pastry onto thermomat and cut into 6cm circles

    ( You will fit 12 on each sheet)

    10.Place onto a pre greased mini quiche tray and place a heaped

    teaspoon of the mixture into each pastry.

    11.Repeat step 8 & 9 another 2 times so you have 36 filled pastries in total.

    12.Cook in a hot oven for 12 minutes or until lightly browned.

    Serve while warm and enjoy!

Tip

 

These freeze well and can be thawed and heated up as needed.

You can replace the Crab with Bacon or Cooked chicken.. These are so delicious and are great for picnics and barbeques..

  • I made these without crab

    I made these without crab meat and with whatever else I had on hand.  (About 100 g of bacon and topped up with extra mushrooms and feta).  Worked really well and I look forward to trying with different fillings.  They were nice cold, but much better warmed up.  Thanks for the clear instructions and photos.  It really takes the guesswork out of how much filling etc.
