Daddy's Green Quiche

Ingredients

Pastry

  • 1 --- Short Crust Pastry, from EDC

Quiche Mix

  • 100 g Cheddar cheese, cubed
  • 3-4 --- spring onions, roughly chopped
  • 5 pieces short cut bacon, trim the fat
  • 10 --- eggs
  • 1 --- splosh milk
  • 2 pinches Mixed Herbs, dried (or fresh)
  • 3 --- big handfuls spinach

Recipe's preparation

    Short Crust Pastry
  1. Prepare as per instructions in your Every Day Cookbook.

    Roll out and put in quiche dish.

    Cover with baking paper and add rive or dried beans.

    Blind bake for 1/2 hour on 180C

    Add quiche mix in

  3. Closed lidGrate cheese 6 secs/speed 8, put aside.

    Add spring onions and chop 3 secs/speed 7. Put in fry pan with chopped bacon and fry until browned. Put aside. (or if you prefer you can saute in the bowl).

    Add eggs, milk, spinach and herbs to the bowl.  Chop 10 seconds/speed 9.

    Add 1/2 the cheese, bacon, onion to the bowl.  Mix 10 secs speed 4.

    Add to the base and cook for 1/2 hour in the oven at 180C or until set.

    Made this for our dinner tonight with a warm salad - I had to make a couple of substitutions, but it was fantastic!
