Easy Zucchini Slice

Ingredients

12 portion(s)

  • 500-600 grams zucchini, roughly chopped
  • 1 --- large onion, quartered
  • 140 grams Tasty cheese, cubed
  • 3 --- rashers bacon, roughly chopped
  • 5 --- eggs
  • 140 grams Self Raising Flour
  • 90 grams oil or butter
  • salt & pepper, to taste

Recipe's preparation

  1. *      Preheat oven to 180° and grease muffin or slice pan.


    Place zucchini, onion, cheese and bacon in mixing bowl and chop 3 sec / speed 7.


    Scrape down sides of bowl and chop for another 2 sec / speed 7 if necessary.


    Add eggs, flour, oil or butter and salt & pepper.


    Combine 7 sec / reverse / speed 4.


    Pour into large tin, or muffin tins.


    Bake in preheated oven 30 mins or until puffed and golden.

    Omg, just made this, added other veggies as I did not have enough zucchini, so yummy and replaced the SR flour with rice flour I milled before I started this recipe. Thank you for sharing Smile

    I have made this never fail recipe over & over!!!  

    For those gluten free people the flour can easily be substuted with gluten free flour & baking powder and you would never know the difference!!!  :tmrc_emoticons.;):
