Feta, Bacon & Spinach Quiche

  • 3 - 4 pieces Shortcrust Pastry
  • 8 eggs
  • 200 grams thickened cream
  • 200 grams feta cheese, (Greek), cut into small cubes
  • 250 grams Grated Cheddar Cheese
  • 1 package frozen spinach leaves, defrosted & all excess liquid squeezed out
  • 200 grams shortcut bacon rashers, cut into small pieces
  • 200 grams brown onions, peeled & quartered
  • 200 grams cherry tomatoes, halved
  • 1/4 teaspoon pepper, ground
  • 2 portion rocket leaves, 1 handful per quiche (optional)

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Base
  1. Preheat oven to 220°C.
  2. Line 2 quiche dishes with shortcrust pastry.
  3. Use a fork to gently pierce base & sides of pastry bases.
  4. Line the bases & sides of uncooked pastry with non-stick baking paper.
  5. Fill with rice, dried beans or baking weights. (This stops the pastry base rising during cooking.)
  6. Bake in oven for 10 minutes, or until the edges are just starting to go golden. While the pastry is blind-baking, start on the filling. After pastry has blind-baked, remove dishes from oven & set aside to cool.
  7. After the pastry has blind-baked & you've removed the dishes from the oven to cool, reduce the oven temperature to 180°C. (You may like to leave oven open for a short while to help reduce the temperature).
  8. Filling
  9. Add onion to mixer bowl. Chop 5 seconds, speed 5, MC on. Scrape down sides of bowl.
  10. Add bacon pieces to mixer bowl. Cook 5 minutes, Varoma Counter-clockwise operation, speed 1, MC off.
  11. Leave mixer bowl for 5 minutes to cool. (Now is a good time to cut up your feta & cherry tomatoes & squeeze liquid out of spinach).
  12. Add eggs, cream, feta, cheddar, spinach & pepper to mixer bowl.
  13. Mix 10 seconds, Counter-clockwise operation speed 4, MC on.
  14. Divide filling evenly between the two quiche dishes with cooled pastry & spread evenly.
  15. Decorate the top of each quiche with cherry tomato halves, cut-side up.
  16. Bake in 180°C oven for 40 minutes, or until cooked through.
  17. Allow to cool slightly, before serving. Add a handful of rocket to the top of each quiche, if you want it to look fancy &/or wish to add some greens to the meal.

Tip

You can easily omit the pastry in this recipe if you wish (but if you do, make sure you grease the dishes first, before adding the filling).

These can be made into mini quiches instead - just bake in muffin trays instead of quiche dishes.

I made this recipe to make two quiches, as one quiche is not enough for my family. But you can easily halve the ingredients if you only wish to make one quiche.

    Have made this a number of times now ... halved the recipe each time... but even hubby, who was a total non quiche eating person, has eaten and enjoyed, simply delicious 😋
