Gluten Free Caramelised Onion, Pumpkin & Feta Tart

Caramelised Onion

  • 45 g unsalted butter, diced
  • 1 red onion, thinly sliced
  • 30 g light brown sugar
  • 20 g balsamic vinegar

Gluten Free Pastry

  • 75 g unsalted butter, chilled & diced
  • 150 g Gluten free plain flour
  • 1/2 tsp salt, (to taste)
  • 50 g Greek yoghurt
  • 1 egg

Filling

  • 4 eggs
  • 50 g Milk
  • 100 g cream
  • 1/4 tsp salt, (to taste)
  • 2 pinches pepper, ground, (to taste)
  • some Fresh Baby Spinach, loosely hand chopped
  • some butternut pumpkin, small cubes, pan fried
  • olive oil, for frying or roasting pumpkin

Recipe's preparation

    Caramelised Onions
  1. Place onions, butter, sugar and balsamic vinegar into mixing bowl. Then, with simmering basket in place instead of measuring cup, cook 20-30min/120°/Counter-clockwise operation/speed Gentle stir setting until onions are soft.
  2. Meanwhile, pan fry (or roast in oven on a tray) some diced pumpkin for filling. Lightly coat with olive oil.
  3. Once finished, set aside caramelised onion and pumpkin aside to cool.
  4. Gluten Free Pastry
  5. Place flour, butter, salt, egg and greek yoghurt in mixing bowl, mix 20 sec/speed 4. Transfer out onto well-floured dough mat or surface. Dough will be sticky but should come together in a ball with extra flour dusted.
  6. Using a rolling pin, roll out pastry. Line prepared quiche tin with pastry, prick base with a fork then set aside.

    TIP: Using a dough mat or baking paper to roll pastry on will make transferring to the tin easier, as you can lift th dough on the mat or paper and then peel away to transfer.
  7. Preheat oven to 180°. Keep tart base cool in the fridge while you continue preparations.
  8. Filling
  9. Place eggs, milk, cream, salt & pepper in mixing bowl and mix for 30sec/speed 4.
  10. Remove tart base from fridge and spread caramelised onion around evenly.
  11. Loosely chop baby spinach and spread evenly on top of caramelised onion. Do the same with your prepared pumkpin.
  12. Pour filling mixture into base over onion, spinach and pumkpin. Sprinkle feta on top. Bake in oven for 20-25 minutes or until golden. Serve warm or cold.

Tip

Grease tart tin with butter to help brown pastry and prevent sticking.

You can use different fillings to suit your own preference, i.e. bacon, parmesan cheese, mushrooms etc.
