Gluten Free Sweet Chili & Cheese Muffins
- 350 grams rice flour, Brown or White (Whichever you prefer)
- 300 grams cheese, Tasty/ Cheddar
- 2 teaspoons baking powder
- 1 teaspoons salt
- 1 tablespoon sugar, White/ Raw
- 1 --- egg
- 300 grams Milk
- 25 grams sweet chili sauce

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Preheat oven to 210 degrees and grease or line a 12 hole muffin tin.
Prepare rice flour if you do not already have on hand.
Place 175g of rice in bowl, blend 60 seconds, speed 9 (measuring cup on.)
Empty to separate bowl and blend other 175g of rice, 60 seconds, speed 9 (measuring cup on)
Add 300g of preferred cheese to bowl, add rice flour back in, add 2 teaspoons of baking powder, 1 teaspoon salt, 1 tablespoon sugar.
Once all dry ingredients have been added mix for 45 seconds on speed 1.5 (measuring cup on)
Remove measuring cup and complete wet ingredients step. - Remove measuring cup and place preferred jug/ bowl etc on top of closed thermomix bowl lid.
Weigh 300g of milk, crack 1 egg into milk and mix with fork to combine.
Add egg & milk mixture to dry ingredients
Weigh in 25g of sweet chili sauce. - Once you have added in your wet ingredients to the dry. Mix for 45 seconds, speed 1.5 (measuring cup on)
Spoon into prepared muffin tin and bake for 15 minutes. Serve with sour cream
Note** that if mixture does not seem "wet enough" add in 1-2 tablespoons extra of milk

Tip
Add some precooked bacon and chives to make it a bit more wholesome. Please note that this will then make it non vegetarian.

Great muffins. I also used lactose free milk, lactose free cheese and added bacon. I love that I almost always have these ingredients on hand. Best muffin so far that is gluten and lactose free for my daughter.
