Haloumi & Corn Fritter bites

  • 60 grams olive oil
  • 225 grams cheese, haloumi
  • 420 grams canned sweet corn kernels, drained
  • 2 eggs
  • 90 grams flour, self-raising
  • 1 teaspoons lemon zest, grated
  • 2 tablespoons fresh chives, roughly chopped

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Preheat oven to 200oC. Place a small amount of oil in each hole of a 24 hole mini muffin pan and place in oven for a few minutes to heat up.
    2. Place Haloumi in bowl and chop on Sp 4 for 10 secs.
    3. Add corn, eggs, flour, lemon zest and chives - Combine on Sp4 for 30 secs. Scrape down sides of bowl and mix a bit longer, if nec.
    4. Divide mixture evenly in the muffin pan.
    5. Bake for 12-15 mins until golden. Allow to cool slightly in pan before turning out onto wire rack.
    6. Can be eaten alone or served with sweet chilli sauce.

You could also sprinkle with paprika before baking for a bit of extra flavour.

    Very nice - good size for nibbles,taste good & easy to make. Goes well with Greek yoghurt and sweet chilli sauce.
