Ham, Cheese and Corn Muffins

Method

  • 100 grams Tasty Cheese cubed
  • 100 grams shaved leg ham
  • 300 grams Self Raising Flour
  • 1 tablespoon agave syrup
  • 1 egg
  • 200 grams full cream milk
  • 125 grams Creamed Corn, 125g tin creamed corn

Recipe's preparation

  1. 1. Grease a 12 hole standard cupcake baking pan (or 2 x 24 hole mini cupcake baking pans) with olive oil.

    2. Grate cheese 3 seconds/speed 8. Set aside in a small bowl.

    3. Chop ham, 5 seconds/speed 4.

    4. Add flour, agave syrup, egg, milk, corn and reserved cheese to the Thermomix bowl. Mix for 20 seconds/REVERSE/speed 2. Scrape down sides of bowl.

    5. Mix another 10 seconds/REVERSE/speed 2 if required.

    6. Spoon into cupcake baking pans.

    7. Bake for 15 minutes or until golden and just firm to the touch. Allow to cool 10 minutes in the tray before removing to cool on a wire rack.

    8. Enjoy!

Tip

You can replace the Agave syrup with 2 tablespoons of caster sugar.

    My kids and the kids next door loved these. We were camping and wanted to use what we had, so I added150g chopped ham and a 310g can of creamed corn. Very yummy a new lunchbox favorite
