Pumpkin Pancakes - 2 Ingredients!

Pancakes

  • 200 grams pumpkin, pre-cooked
  • 4-5 eggs, depending on size

Recipe's preparation

  1. Place pumpkin and eggs in thermomix

    Blend speed 5 until combined

    Fry in frying pan.

Tip

I bake a whole pumpkin in the oven on the weekend. (Approximately 1hr at 180 degrees). I then use the pumpkin in various recipes during the week (I have a thermomix pumpkin custard recipe in addition to this one!). You could also steam the pumpkin in the varoma or steaming basket. 

I used a 30cm frypan and fried 4 small pancakes (between 5-10cm diameter) at a time. It made 48 pancakes in total. 

These are thinner than normal pancakes, but my children adore them any time of the day!

    other than these and the custard what else do you make with the pumpkin? how long do you think the pumpkin will last after cooked?
