Pumpkin, chorizo and spinach frittata

  • 40 grams Parmesan cheese, cubed
  • 40 grams cheddar cheese, cubed roughl
  • 500 grams Pumpkin - cubed, Oven roasted
  • 1 chorizo sausage, Cut into 3cm pieces
  • 50 grams plain flour
  • 6 eggs
  • 400ml full cream milk
  • 100 grams baby spinach, Washed
  • 6

Recipe's preparation

    Pumpkin, chorizo and spinach frittata
  1. Roast cubed pumpkin in 180degree oven for 30 minutes or until cooked. Set aside.

    Place cubes Parmesan and cheddar in TM bowl. Grate for 4 seconds on speed 7. Set aside.

    Add onion and chorizo. Chop for 3 seconds on speed 6.

    Cook for 2 minutes, at 100 degrees ,in reverse, speed soft.

    Add plain flour, milk,eggs,spinach and grated cheese. Mix for 5 seconds ,in reverse on speed 4.

    Lightly grease baking dish, place cooked pumpkin on the base and pour  mixture evenly over pumpkin.

     

    Cook for 40min at 180degrees until frittata is puffed and golden.

    Cool slightly before serving.

    Family like it but I didnt think the chorizo and pumpkin worked very well. It was a strange flavour. The consistency of the quiche was good and the egg flavour was nice but the other ingredients weren't my taste.

    Easy, delicious and forgiving! You could add anything, I had jalapeno and cheese sausages which were yummy then served with salad. Family loved it.

    I added 200g of sour cream as i needed to use some then made up the difference with milk.

    Also used serrano ham instead of chorizo, just tore it up.

    Looked a bit like scrambled eggs inside, but tasted great :0)

    Wow, if I could give 10 starts I would.  My sons raved about this recipe. Next time I would put cubes of potato as well as pumpkin.  I had cream that needed to be used up so added 100g and 300g milk.  The recipe said mls but I used the scales.  Stuck badly to dish would would use baking paper next time. Love tmrc_emoticons.) Big Smile

    Absolutely beautiful flavour & texture! I used a 25cm pie dish and there was enough mixture left over to make an extra deep dish regular pie size serving. I cooked the chorizo, chopped, in the oven for 10 minutes before adding to the mixture. This recipe is a keeper! Thanks for sharing tmrc_emoticons.)

    Fantastic recipe! I used GF flour, LF milk, bacon & kale (didn't have spinach and chorizo). It was excellent and my boys finished it so quickly that I had to make a second which is just out of the oven. While it cools, I wanted to write a big thank you for sharing this one.     I used a 21cm square baking tin which meant I had to cook it for 70 minutes (an extra 30 mins) but it turned out beautifully!

    Next time I think I will cook the Chorizo sausage first before cutting it and will use two or three.
