Quiche with Shortcrust Pastry

Pastry

  • 220 grams plain flour
  • 100 grams unsalted butter>ID15196
  • 1 egg yolk
  • 3 level teaspoons lemon juice

Ingredients

  • 200 grams Cheddar cheese, Chopped
  • 200 grams ham, Chopped

Mixture

  • 1 egg white, Remaining
  • 3 eggs
  • 200 grams cream, whipping, 30-40% fat
  • salt, sea, fine
  • pepper, black, ground

Recipe's preparation

    Pastry
  1. Combine flour and butter in mixing bowlClosed lid and mix for 10 seconds speed 6 to rub in butter.
  2. Add egg yolk and lemon juice 10-20 sec Dough mode
  3. Place pastry in prepared quiche mould and push into the base and sides, refrigerate for 30 mins.
  4. Preheat oven on 180 and blind bake base for 10 mins. Remove pastry from oven.
  5. Preparation of Ingredients
  6. Place the cheese into the mixing bowl and chop Counter-clockwise operation for 5 secs speed 5. Scrape down sides and set aside or put directly into prepared base.
  7. Place the ham into the mixing bowl and chop for 5 secs speed 5. Scrape down sides and set aside or put directly into prepared base.
  8. Mixture
  9. Add eggs, cream, salt and pepper for 5 secs speed 5.
  10. Gently pour mixture into the base on top of the ingredients.
  11. Bake for 45 minutes on 180 or until the mixture is firm to touch.

Tip

Dough should cling together when pressed lightly using your fingertips.

Keep an eye on the quiche to ensure the top does not burn, reduce temperature to suit your oven.
