Quinoa and Vegetable Muffins - Great snack for kids

Ingredients

Muffins

  • 100 g quinoa, soak for at least one hour
  • 800 g Boiling water
  • 1 tbsp Vegetable stock paste
  • 200 g mixed vegetables of choice, chopped into 1-2cm pieces. **see notes
  • 2 eggs
  • 100 g Tasty cheese, grated

Recipe's preparation

    Muffins
  1. 1. Preheat oven to 180deg

     

    2. Place hot water and stock into TM bowl and insert simmering basket loaded with quinoa

     

    3. Add vegetables to Varoma and place into position. Steam - 15min/Varoma temp/speed 2

     

    4. Remove quinoa and empty water from bowl. Rinse quinoa and rinse out TM bowl to cool

     

    5. Place quinoa, steamed veggies, eggs and cheese in TM bowl and mix - Counter-clockwise operation 10 secs/speed 3

     

    6. Spoon into silicone muffin moulds and bake for 15-20 min or until golden brown and firm to touch

     

    7. Delicious served with a ranch dressing, or add to luncboxes for a nutritious alternative to sandwiches!

Tip

** I used sweet potato (cubed), brocolli and sweet corn in my muffins and they got the thumbs-up all round!

** You might like to add some feta cubes at step 5 to add a bit of an adult-factor and serve them as appetizers.

    We made these muffins for lunch today and we both really enjoyed them.  I had tried something similar in a cafe and we preferred the ones we made.  I only had one egg so substitued a chia "egg" for one of the eggas and I added a very small amount of thyme.  Thank you very much for a delicious and healthy recipe.

    Thi is one of my favourite recipes. I add fetta cheese and they taste amazing. Last time i made it in a loaf dish instead of muffin trays and had it as a slice which made it alot easier. I took them to a party last week and everyone was asking me for the recipe.

    i made these last night for the kids.  Kids LOVED them and so do I! Just had some cold for breakfast.

    This was so easy and so tasty. It's going into my tried and trusted recipe file now.
