Spinach & Feta Cheese Pie

Mixture

  • 150-250 grams Cheddar cheese, Cut in cubes
  • 150 grams Fetta Cheese, Broken into pieces
  • 1 bunch spring onions, Cut in approx quarters
  • 1 bunch Silverbeet or Spinach, Washed
  • 5-6 eggs
  • salt & pepper, To Taste

Recipe's preparation

    Filling
  1. 1.  Grate hard cheese - 3-4 secs speed 5

  2. 2.  Add Feta Cheese - 2-3 secs spped 5. 

  3. 3.  Set Cheese mixture aside, no need to clean out bowlGentle stir setting

  4. 4.  Add spring onions to bowl - 2-3 seconds speed 5.  Set aside

  5. 5.  Add spinach/silverbeet to bowl - 4-5 seconds speed 5

  6. 6.  Add spring onions & oil to the spinach.  Saute 3mins 100degrees, speed 2.  Set aside, no need to clean bowl

  7. 7.  Add eggs, mix 10 seconds speed 6

  8. 8.  Add spinach & onion mixture and cheese mixture to eggs + salt & pepper to taste.  Mix Counter-clockwise operation speed 4, 10seconds

  9. Putting the pie together
  10. 1. Oil a pie or small lasagne dish.

  11. 2. Lay 5-6 pieces of filo pastry, brushing each piece with melted butter or oil before putting the next one on.

  12. 3. Pour spinach & cheese mixture onto pastry case

  13. 4. Lay 5-6 pieces of filo pastry on top of spinach mixture, brushing each piece with melted butter or oil before putting the next one on.

  14. 5. Score pastry & sprinkle with water

  15. 6. Bake in a moderate oven for approx 45 minutes or until filo pastry is crispy and spinach & egg mixture cooked through

Tip

I have used frozen spinach for this dish.  Can skip step 5 if going to do this.

 

I am pretty flexible with the cheeses - I don't often measure specifically, can add more or less.

 

I've also added sundried tomatoes to this as well

    This turned out really good. I used a random picking of greens from the vege garden including bok choi and parsley. Drained the greens after cooking them. Used the mix in a pie with puff pastry, I dont like fiddling with filo pastry. Everyone ate it and said it was great. Thanks for the recipe

    Nice pie. I only had frozen puff pastry in my freezer. Turned out I only had one square of it . So I sprayed a square glass dish with canola spray, placed the spinach mix in it and placed the pastry square on top. A bit like a chikcken pot pie. It was delicious. Will make this one again tmrc_emoticons.)

    I did 200g of Feta and 60g Cheddar and 100g of Parmesan. Just what i had in fridge but will def be using a combination of cheddar and parmesan in furture. Soooo tasty
