Vegan "Sausage" Rolls

Ingredients

Filling

  • 1 onion
  • 1 tablespoon Dry Basil
  • 1-2 tablespoon Oil (olive, rice bran)
  • 250 g soy milk / almond milk / rice milk
  • 1 1/2 teaspoon Garlic powder
  • 2 tablespoon Onion powder
  • 1 1/4 teaspoon celtic Salt
  • 2 tablespoon soy sauce
  • 290 g Brazil Nuts
  • 5 slices bread
  • 1 teaspoon mixed herbs (dried)

Pastry

  • 4 sheets Vegan Puff Pastry
  • 2 tablespoon Sesame Seeds, White

Recipe's preparation

    Filling
  1. Break bread into 3-4cm pieces and process 10sec/speed 6. Set aside. 

     

  2. Mill Brazil nuts 5 sec/speed 7. Set aside. 

     

  3. Chop onion in half and process 3 sec/speed 7. Scrape down sides. Add basil, oil and salt and cook 3 min/varoma/speed 1. 

     

  4. Add soy milk, garlic powder, onion powder and soy sauce and mix 10 sec/Counter-clockwise operation/speed 3-4 (should be mixed thoroughly)

     

  5. Add Brazil nuts, bread crumbs and mixed herbs. Combine 15 sec/Counter-clockwise operation/speed 4-5. 

     

  6. Assemble
  7. Pre heat oven to 210 degrees. Line two baking trays with baking paper. 

     

  8. Cut each sheet of pastry in two length ways and place a line of filling along the middle. Fold pastry over and place on lined tray with seam underneath. 

     

  9. Lightly brush with soy milk and sprinkle sesame seeds over. 

     

  10. Place in oven and cook for 20 mins turn and bake for further 10-15 mins until brown.

Tip

Brazil nuts can be substituted for walnuts. 

Any remaining mixture can be rolled into balls and cooked at 180 degrees for 20 mins, turned and baked for another 15 mins.
