Zucchini Slice - from Everyday Cooking for Thermomix Families

Ingredients

Zucchini slice

  • 80 gram olive oil plus extra for greasing
  • 100 grams cheddar cheese cut into cubes (3cm)
  • 350 grams zucchini cut into quarters
  • 160 grams Bacon (3 rashes) cut into pieces
  • 5 eggs
  • 100 grams rice flour
  • 1 pinch sea salt
  • 1 pinch ground black pepper

  • lamington tin or over proof dish (25 x 15 cm)
  • Baking paper
  • Large bowl

Recipe's preparation

    Method
  1. 1. Pre-heat oven 180 degrees. Grease & Line Lamington tin or overnproof dish with baking paper and set aside. 

    2. Place Cheese into mixing bowl and grate 4-7 sec/speed 6 until cheese is evenly grated. Transfer into bowl and set aside.

    3. Place Zucchini into mixing bowl and grate 4-7 sec/speed 4, until zucchini is evely grated. Transfer into bowl with cheese and set aside

    4. Place onion and bacon into mixing bowl and chop 3 sec/speed 5. Scrape down sides of mixing bowl with spatula, then saute 5 mins/120 degrees/speed 1.

    5. Add eggs, rice flour, salt, pepper, reserved grated cheese and zucchini mixture and 80g olive oil and combine 6 sec/Counter-clockwise operation/speed 4.

    6. Pour mixture into perpare tin or dish and bake for 30 minutes or until golden brown. Serve hot or cold.

Tip

Is also nice if you sprinkle with pine nuts before baking also served with a relish/chutney

    I had half the amount of bacon and it still worked out nicely. Also, it didn't occur to me to mill some rice flour (newbie) first so I subbed plain flour and it was still nice. I found the end result was quite wet (less so as it cooled down, and it was still delicious anyway) but am wondering if that's because the rice flour is more absorbent?

    And yes, the book itself lists 1 x brown onion, approx 150g, cut into pieces.
