I've had this recipe saved for a while and finally got to make it. It was delicious! I made it in my square tin as my slice wasn't big enough. I added 1 tsp of vanilla and 1 tsp of cinnamon. I also used melted butter and cinnamon sugar on top instead of icing. It was really nice. Thank you.

So tasty! Who would believe that there's so much nutrition in this! I used wholemeal self raising flour and reduced the sugar. Highly recommend with a coconut sugar and cinnamon mix topping instead of icing

    Delicious!!

It was light and super tasty! Even my fussy 9 yr old wolfed it down! Topped it with some left over cream cheese frosting I had made for a different carrot cake. Will definitely make again! (Used a green apple (Granny Smith) and could taste the sharper apple flavour of it - was lovely!).

    Submitted by Learningmum on 4. April 2016 - 16:37.

Does this have chunky bits of fruit throughout the cake once cooked? And would it be fine to blitz fruit a bit more, my still learning to like food 5yo can't handle chunky fruit even if cooked, in fact well blended into cake or frozen is only way he will eat

ETA I just blitz longer and even super fussy child eats it knowing what is in it tmrc_emoticons.)

Lovely recipe. I also made these into mini cupcakes (8-10 minutes, 180 degrees), and added a teaspoon of cinnamon and half a teaspoon of ginger. I haven't iced them yet, but I've enjoyd a couple fresh from the oven, and I don't even think they need it! Delicious and so, so easy!
