Ingredients

Cake

  • 125 grams Butter
  • 150 grams caster sugar
  • 340 grams Self Raising Flour
  • 1.5 level teaspoons bicarb soda
  • 3 tablespoons Milk
  • 2 eggs
  • 1 Med sized carrot, Roughly chopped
  • 1 Med sized apple, Cored and roughly chopped
  • 3 bananas, Roughly chopped

Cream cheese icing ( optional)

  • 250 grams full fat cream cheese, room temperature
  • 1 lemon, Juiced
  • 115 grams icing sugar

Recipe's preparation

    Cake
  1. Preheat oven to 180C

    Grease and line (extend paper up the sides) a slice tin. Mine is 30cm x 21cm

    1. Put butter into the Closed lid"Closed lid" .

    2. Melt at 60C, sp/2/ 3 minutes or until melted.

    3. Add remaining ingredients

    4. Blend 20 secs/sp5. Scrape and repeat.

    5. Spread into prepared tin and bake for 40-45 minutes or until done when tested.

    6. Leave in tin to cool before icing (optional)
  2. Cream cheese icing
  3. 1. Combine cheese and icing sugar in Closed lid"Closed lid" .

    2. Whizz at sp 4/20 secs and add enough lemon juice, through the hole, to make it a nice spreadable consistency. It depends on the size of your lemon.

    3. Spread over cooled cake.

Tip

A combination of 3 of my favourite cakes..!

Stays moist for a long time.

Icing is optional. It is also dlicious, brushed with melted butter and sprinkled with cinnamon sugar when hot out of the oven.

    I've had this recipe saved for a while and finally got to make it. It was delicious! I made it in my square tin as my slice wasn't big enough. I added 1 tsp of vanilla and 1 tsp of cinnamon. I also used melted butter and cinnamon sugar on top instead of icing. It was really nice. Thank you.

    So tasty! Who would believe that there's so much nutrition in this! I used wholemeal self raising flour and reduced the sugar. Highly recommend with a coconut sugar and cinnamon mix topping instead of icing

    Easiest and best cake!
    i just sprinkle top with cinnamon and castor sugar as I do with banana bread.
    Delicious and freezes well in slices for lunchboxes.
