- 125 grams Butter
- 150 grams caster sugar
- 340 grams Self Raising Flour
- 1.5 level teaspoons bicarb soda
- 2 --- eggs
- 1 --- Med sized carrot, Roughly chopped
- 1 --- Med sized apple, Cored and roughly chopped
- 3 --- bananas, Roughly chopped
- 1 x 425g can pineapple pieces, drained of juice, except for 2 tablespoons, reserved
Cream cheese icing ( optional)
- 250 grams full fat cream cheese, room temperature
- 1 lemon, Juiced
- 115 grams icing sugar

Recipe's preparation
- Preheat oven to 180C
Grease and line a 23cm springform pan.
1.Put butter into the "Closed lid" .
2. Melt at 60C, sp/2/ 3 minutes or until melted.
3.Add remaining ingredients
4. Blend 20 secs/sp5. Scrape and repeat.
5. Spread into prepared tin and bake for 45-60 minutes or until done when tested.
6. Leave in tin to cool before icing (optional) - 1. Combine cheese and icing sugar in "Closed lid" .
2. Whizz at sp 4/20 secs and add enough lemon juice, through the hole, to make it a nice spreadable consistency. It depends on the size of your lemon.
3. Spread over cooled cake.

Tip
A variation of one of my favourite cakes, Apple, banana and carrot cake.
Stays moist for a long time.
Icing is optional. It is also dlicious, brushed with melted butter and sprinkled with cinnamon sugar when hot out of the oven.
Or sliced and spread with butter.

Easy to make, I added 1 teaspoon of cinnamon and one teaspoon of nutmeg and spices for more flavour also didn't have apples so added some chopped macadamias.
Very most, will definitely bake again.

Flavour - I added 1 teaspoon cinnamn and 1 teaspoon mixed spice, giving it a little extra flavour.
After one hour the the cake was under cooked in the centre
Next time I wouldn't add the pineapple juice and I'd cook for 1hr-15minutes.
Add baking paper, going higher that the tin, so it doesn't burn from the extra time cooking.
Definitely make again as it was so easy!

I made these into muffins: 12 large and 24 mini. They took 20 minutes and were perfectly cooked. I omitted the apple, but added some cinnamon. The whole family loved them.

I will probably add in some cinnamon & mixed spice next time for something different.
I wasn't sure about the reserved pineapple juice from the canned pineapple and whether it was meant to go in the cake batter or not. I ended up not adding it in as I had a slightly larger tin of pineapple.
