All Natural Honey & Oat Nut Bars

  • 170 grams rolled oats
  • 100 grams Chopped walnuts
  • 50 grams Raw Peanuts
  • 50 grams sliced almonds
  • 50 grams Shredded coconut
  • 20 grams puffed wheat or rice
  • 125 grams honey (1/2 cup)
  • 3 tbsp brown sugar
  • 2 tablespoons Butter
  • 1.5 teaspoons vanilla extract or paste
  • 1/4 teaspoon salt

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Instructions
  1. Preheat oven to 180 degrees

    Line 2 baking trays with foil

    Place rolled oats , walnuts, peanuts and almonds in TMX  MC reverse , speed 2, for 15 seconds.

     

    Spread oats, peanuts, walnuts and sliced almonds thinly onto prepared baking trays. Toast lightly for about 7 minutes

     

    Remove from oven toss through coconut.

    Re- spread mixture thinly and bake for a further 7 minutes being careful not to burn coconut.

     

    Whilst nut mixture is baking place honey, brown sugar, butter,  vanilla and salt in TMX Varoma temperature - MC in, speed 3, 4 minutes  or until sugar has completely dissolved.

     

    Remove nut mixture from oven place into TMX bowl MC in and mix on Reverse,  speed 1 for 1minute.

    Scrape down sides of bowl.

    Add puffed rice or puffed wheat continue to mix 1 minute with MC in. Reverse,  speed 1 for a further 1 minute.

     

    Place mixture into a foil lined tin (approx 28 x 1tmrc_emoticons.8) sprayed with cooking oil.

    Make sure foil overhangs on both sides of tin by at least 10 cm - this foil acts as an envelope and stops mixture for burning. Fold foil to enclose nut mixture and prevent burning.Do not press to hard on mixture.

    Reduce oven temp to 160 and bake for 20 minutes.When cool place in fridge for 60 minutes before cutting into rectangles.

     

    Bars should be stored wrapped in baking paper to prevent sticking together.

     

    Keep in an airtight container for about 1 week.
