Apple berry crumble pie - Wheat free

Ingredients

Pastry

  • 1 teaspoon chia seeds
  • 1 tablespoon water
  • 125 g gluten free white plain flour blend
  • 1 pinch salt
  • 60 g margarine
  • 30 g brown sugar
  • 1 egg yolk
  • 1 tablespoon water

Filling

  • 2 apples, (Cored and chopped)
  • 1 Cup mixed berries, (I used frozen)
  • 1 tablespoon honey, (I used Manuka)

Crumble Topping

  • 3/4 Cup rolled oats
  • 1/2 Cup gluten free flour
  • 1 teaspoon cinnamon
  • 4 tablespoon golden syrup
  • 2.5 tablespoons coconut oil, Melted
  • 1 tablespoon Peanut Butter
  • 2 tablespoons slivered almonds

Recipe's preparation

    Pastry
  1. Turn oven on to 180 degrees. Grind chia seeds for 10 seconds, speed 10, then put in separate bowl and soak chia seeds in 1T water for 5 minutes.

  2. Place GF flour, salt, chia seeds and magarine in bowl. Knead on speed 2 for 20 seconds, until resemble bread crumbs.

  3. Add brown sugar, egg yolk amd remaining water. Knead until combined. Do not over-knead.

  4. Remove pastry from bowl. Gently hand knead into a ball. Wrap in thermomat or cling wrap and refrigerate for 15 minutes.

  5. Remove from fridge. Place ball on one half of thermomat, fold other half over top, then roll out flat. Place in greased pie dish, and bake at 180 degrees for 20-25 minutes, until pastry is firm. Remove from oven to cool.

  6. Filling
  7. Add chopped apples, berries and honey to microwave safe dish. Cook for 10 minutes, stirring occassionally. (Could also be cooked in thermomix of course)

  8. Once cooked, add to thermomix bowl (if cooked in microwave) and mix 10 seconds, speed 3.

  9. Add to cooled pastry case.

  10. Crumble topping
  11. Place all topping ingredients in bowl. In reverse mode, blend ingredients until well combined, on speed 2.

  12. Place crumble evenly over top of pie filling.

  13. Bake at 180 degrees for 25 minutes or until crumble and pastry edge are starting to brown.

Tip

Pretty sure this recipe is gluten free, but I'm not an expert on that, was just going for wheat free.
