  • 2 teaspoons vanilla extract
  • 50 g Butter, plus extra for greasing
  • 80 g rolled oats, (or quinoa flakes)
  • 250g g almond meal
  • 80g g arrowroot flour
  • 1 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 pinches sea salt
  • 80 g pepitas, (pumpkin seeds)
  • 60 g sunflower seeds, (kernels)
  • 80 g Shredded coconut
  • 2 tablespoons chia seeds

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat a fan-forced oven to 180°C/350°F/Gas Mark 4 and grease six holes of a muffin tray with butter or line with patty cases
  2. Add apple to bowl, then chop on speed 5 for 8 seconds
  3. Add wet ingredients, then mix on speed 3 for 5 seconds.
  4. Add dry ingredients, then mix reverse speed 1 for 15 seconds.
  5. Mix again on speed 2 for 10 seconds then once done, transfer to muffin tin.
  6. Push a thin wedge of apple into the muffin mix and sprinkle the remaining seeds and coconut on top. Drizzle with the remaining melted butter.
  7. Place muffins into the oven and bake for 20 minutes or until browned on top (if your seeds are browning too quickly, cover the tray with a layer of foil).
  8. Once cooked through, remove muffins from the oven and place onto a wire rack to cool. Store muffins in an airtight container in the fridge to have over the week for breakfast. Serve one muffin with 1 tablespoon of greek yoghurt dolloped on top.
