Ingredients

Muffin Mixture

  • 150 grams Apple, Cored and Quartered, (Approx 1 large Apple)
  • 95 grams Butter
  • 2 egg
  • 190 grams Milk
  • 240 grams buckwheat flour
  • 40 grams tapioca flour
  • 2 teaspoons baking powder
  • 90 grams brown sugar
  • 1/2 level tsp sea salt
  • 1 teaspoon ground cinnamon, 1 tsp
  • 1 teaspoon vanilla powder, natural, 1 tsp
  • 300 grams blueberries
  • 1 heaped tablespoons raw macadamia nuts, optional

Crumble Topping

  • 1 heaped tablespoons macadamia nuts
  • 40 grams brown sugar
  • 50 grams buckwheat flour
  • 1/2 teaspoon cinnamon
  • 28 grams Butter, 2 TBSP
  • 1/8 level tsp sea salt

Recipe's preparation

    Crumble
  1. Pre-Heat oven to 180 degrees fan forced

    Chop macadamia nuts 5 sec/speed 5 if they are large.


    Place sugar, flour, salt, and cinnamon into TMX bowl 5 sec / speed 4

    Leave the M/C off 1 min / speed 2.5

    Add butter through the lid while it is turning

    The butter will crumble and the mixture will resemble bread crumbs

    Transfer to bowl and set aside.

  3. Add apple 4 sec / speed 5

    Transfer Apple into a bowl and set aside

    Do NOT clean THX bowl

    Add butter to bowl 1 min 30 sec / 60 deg / speed 1

    Add eggs and milk 6 sec / speed 4

    Add flour, baking powder, salt, sugar, cinnamon and vanilla essence 10 sec / speed 4

    Add reserved apple 20 sec / Counter-clockwise operation"Counter-clockwise operation" speed 3.5

    Add Blueberries and optional nuts and gently stir through using your spatula

    Spoon into 12 muffin cases / tray (greased or non stick)


    Sprinkle with Crumble.

  5. Bake in oven for approx 20 mins until golden

    Check to see if they are cooked by inserting a fork or toothpick into muffin. If it comes out clean they are cooked.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31).
