Baked Blueberry Cheesecake

Base

  • 250 g Arrowroot Biscuits, or similar sweet biscuit
  • 100 g unsalted butter, homemade is great

Filling

  • 175 g blueberries, plus extra for decoration
  • 450 g Cream Cheese.
  • 150 g raw sugar
  • 1 tsp vanilla extract
  • 4 eggs

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Melt butter for 40 seconds/80 degrees/speed 3 (check it is completely melter, add extra time if needed)

    2. Add biscuites to the TM Bowl and crush for 10 seconds speed 5. The mixture should resemble damp sand.

    3. Tip mixture into springorm tin. Press around base of tin using your hands or a spoon.

    4. Spread the blueberries over the base and allow to chill in the fridge for 10 minutes.

  3. 1. Wash and dry mixing bowl. Mill sugar 5 seconds/speed 9. Scrape down the sides of the bowl.

    2. Add Cream cheese and vanilla extract and mix for 20 seconds/speed 5.

    3. Add eggs and mix 20 seconds/speed 5.

    4. Pour over the top of the blueberries and then bake in the oven (170 degrees celcius) for 40 minutes or until it is pale and golden - should only wobble very slightly when you gently shake tin.

    5. Allow to cool in the tin for about 10 minutes.Transfere to a serving plante. Sprinkl over a few blueberries and dust with icing sugar.

    What an easy cheesecake to make, followed the receipe & it turned out beautifully, took the cheesecake to my daughter's for dessert & was a huge hit, thank you for sharing this, will be making it again for Xmas

    I used Ginger Nut biscuits for the base and it was amazing. 

    Also made my own Cream Cheese for it.
