Banana and Choc Chip Muffins

Ingredients

  • 120 g Butter, softened
  • 110 g castor sugar
  • 2 eggs
  • 2 Ripe Banana's, cut into 1/4
  • 100 g Rolled Oats, optional

  • 1 teaspoon bi-carb soda
  • 1 tablespoon hot milk

  • 280 g Self Raising Flour
  • 80 g Choc Chips, optional
  • 20 g Cocoa Powder, optional

Recipe's preparation

    Preheat oven 180 deg. Lightly grease trays or add muffin cups
  1. Insert Butterfly, Add Butter and Castor Sugar and beat 2 min, Speed 4.  Scrape down sides.

    Add Banana's, Rolled Oats and eggs and beat 30 secs, Speed 4.



  2. Mix Hot milk and Bi-Carb together and add to mixture. Mix 10 secs, Speed 4.

  3. Add S/R Flour and Choc Chips and mix 1 min, Speed 1-2, until just mixed.

    Pour into Muffin Tray and cook for 15-20 mins or until lightly brown.

    Optional: Lightly dust with icing sugar.

    Oh these are so light & fluffy!!!!! tmrc_emoticons.D I only mixed the flour etc for 30 secs, scraping down twice.

    i added the choc chips but omitted the cocoa.  Love them and they'll be great for kids' lunch boxes, if they last that long.... tmrc_emoticons.;)
