  • 50 g brown sugar
  • 2 eggs
  • 2 Over Ripe Large Bananas
  • 1 tsp Vanilla Bean Paste
  • 125 g buttermilk
  • 140 g SR flour
  • 50 g buckwheat flour
  • 1 tsp baking soda
  • 250 g Frozen or Fresh Blueberries

Recipe's preparation

  1. Pre-heat oven to 180°C.

  2. Place butter and sugar into mixing bowl and cream 15-20 sec/speed 4.

  3. Add eggs on speed 4 one at a time (scrape sides to ensure the eggs are incorporated).

  4. Add bananas and mix 10 sec/speed 4.

  5. Add vanilla, buttermilk, flours and baking soda and mix 5 sec/speed 4.

  6. Line a loaf tin with baking paper.  Pour half of banana mixture into loaf tin, put half of blueberries on top and push some down.  Top with remaining banana mixture and blueberries on top.  Push some of the blueberries into mixture.

  7. Bake at 180° for 60-70 mins, until a skewer comes out clean.

    This was great thank you! I used 50g of coconut oil and only 20g of brown sugar. I also used spelt flour and baking powder to replace the SR flour. I only used about 170g of frozen blueberrries. Very tasty thanks!

    these were fabulous, I couldn't find my regular size loaf tin so I used my mini loaf pan and made 8 individual cakes. Great for taking to work and warming in the microwave on a cold day.
