Banana Cake

Ingredients

12 slice(s)

  • 125 grams Butter
  • 140 grams caster sugar
  • 1 level teaspoon vanilla
  • 2 eggs
  • 2 Large Ripe Bananas
  • 220 grams Self Raising Flour
  • 55 grams Milk
  • 1/4 level teaspoon Bi Carb Soda

Recipe's preparation

    Banana Cake
  1. 1. Cream butter, sugar and vanilla for 25 sec on speed 4

    2. Beat in eggs one at a time for 20 sec on speed 4

    3. Mash bananas for 5 sec on speed 7

    4. Add self raising flour and beat for 5 sec on speed 8

    5. Dissolve Bi carb soda in milk and add to the mixture via the lid

    6. Beat for 5 sec on speed 5

    7. Pour mixture into bar tin bake in a preheated 180 C oven for 45 min

    8. When cool, ice with a buttery vanilla icing

Tip

1/4 of a cup of walnuts may be added at step 5

    A nice and moist cake. I added cinnamon to the flour. Reduced sugar to 100g, added sultanas and walnuts at the end by folding them into the mix. Definitely will be making this regularly. Instead of icing this cake, I mixed cinnamon and brown sugar together and sprinkled over the top before cooking. Delicious!

    Great recipe, althought I pulled my cake out at 40 minutes, and even that was overdone. It could just be my oven, so next time I will only cook for around 35 minutes.
