Banana Coconut Bread
- 4 Bananas ripe
- 130 grams coconut oil
- 150 grams Rapadura Sugar
- 3 eggs
- 220 grams Spelt Flour White
- 2 tsp baking powder
- Pinch Celtic Sea Salt
- 1 tsp bicarb soda
- 100 grams coconut milk
- 2 tsp vanilla extract
Recipe's preparation
Preheat oven to 180 degrees
Grease loaf tin with Coconut Oil
Place Banans in mixing bowl and mash 5 sec/ Spd 6
Add Coconut Oil and Rapadura Sugar beat 20 sec/ Spd 4
Scrape down. Add eggs and mix 10 sec/ Spd 4
Add remaining ingredients and combine 20 sec/ Spd 4
Pour into a loaf tin and bake 50-60 minutes or until skewer comes out clean.

Tip
For a perfect and fluffy loaf allow to cool inside the tin for at least 1 hour. If it is still hot wait till it is completely cool before cutting.
