- 2 Bananas ripe
- 130 gram pitted dates
- 20 gram almonds
- 2 eggs
- 250 gram Milk
- 50 gram brown sugar
- 300 gram self-raising flour
- dash ground cinnamon
Preheat oven to 180 degree fan forced and prepare muffin tray (either butter or oil).
Put dates and almonds into mixing bowl (speed 6, 10 seconds or until chopped). Remove and put in a side bowl.
Place bananas into mixing bowl (speed 4, 5 seconds or until mashed).
Add eggs, milk, sugar and cinnamon to the bananas in the mixing bowl and combine (speed 2, 7 seconds).
Add sifted self-raising flour into mixing bowl and combine (speed 3, 10 seconds or until combined). Do not over mix.
Put date and almond mix back into mixing bowl and combine into batter gently ( speed 1 until combined).
Distribute into muffin tins. Bake approximately 15 minutes or until cooked. Absolutely delicious warm with a bit of butter.
To make this dairy free substitue milk with lactose-free, soy or almond milk.
The sugar can be omitted.
Substitute almonds for any other nut of choice.
Substitute ground cinnamon for nutmeg if you prefer.
