Banana & Date Bread

  • 8 dates, pitted, Fresh if possible
  • 3 bananas, Ripe
  • 1 tsp vanilla
  • 90 gram coconut oil
  • 1 tsp baking powder
  • 70 gram Shredded coconut
  • 200 gram brown rice, Medjool dates are nice to use
  • 4 eggs

Recipe's preparation

    Banana & Date Bread
  1. Place brown rice into TM bowl and mill for 1 min / speed 9, set aside

    If coconut oil is hard, place in TM bowl and melt 2 min / 37degrees / speed soft

    Add vanilla, eggs, bananas, dates, baking powder, shredded coconut and rice flour.

    Mix for 45 secs / speed 5

    Pour into a lined baking tin and bake for approx 45-60 mins or or test the middle with a skewer and if comes out clean remove from oven. 

    Allow to cool for 5 mins before transfering to cake rake. 

    ENJOY.

    I love this healthy banana bread version.
    Its a great recipe for using up the pulp after making Cookidoo's rice milk.

    I do however prefer to use desiccated coconut and blitz the dates up first.

    I put mine into 12 cupcake cases and baked for 25 minutes at 175deg C fan forced, they were really nice. Perfect GF lunchbox filler (our kindy is nut free).

    This recipe was really nice.  I had to bake for 50 min at 170 fan forced.  I also added some blueberries in the final few seconds of the mix.

    The texture is a bit gritty - Not sure if this is the rice flour or the blueberries or the coconut.  Regardless this is a tasty, healthy bread! Thanks!!

    I love this bread, especially that it is Gluten, Nut & Sugar Free and the ingrediants are ones that you'd have in stock all of the time.  This is a definate add to my GF Snack rotation.  I cooked mine on 170 fan forced for 40 minutes and it was perfect.  Thanks so much for sharing

    Fabulous recipe! Love that it is healthy & the kids can eat it guilt free. It is dense too so you don't need to eat a lot.It is very moist though and does go mouldy quickly in warm weather. 

     

    I cooked mine at 170oC for 45-50mins. It looked burnt & crusty on the outside but is still moist on the inside. Beautiful.
