Ingredients

Bread

  • 120 g Butter, unsalted
  • 3 Bananas medium, over ripe
  • 2 eggs
  • 1 teaspoon vanilla extract.
  • 100 g dates, pitted
  • 280 g Self Raising Flour
  • 1 teaspoon cinnamon
  • 125 g raspberries, fresh or frozen

Recipe's preparation

    Method
  1. Preheat oven to 180*C (160*C fan force).  Grease and line base of loaf pan (25cm x 11cm).

  2. Place butter into mixing bowl and melt 1 min/90*C/Speed 4.

  3. Add banana and dates and blitz 8 seconds/Speed 5.  Scrape down sides of bowl.

  4. Add eggs, vanilla, flour and cinnamon and mix 20 sec/Speed 4.  Scrape down sides of bowl. 

  5.  Gently fold in raspberries

  6. Pour mixture into prepared pan and bake for 50-60 min, or until a skewer comes out clean.  Allow to cool for 5 minutes in pan before turning on to wire rack to cool. 

Tip

Once the bread has cooled, slice in to nice thick slices with a bread knife and wrap individual pieces in cling wrap.  Then pop in freezer.  Makes for a quick and easy after school or lunch box snack.

    Was pleasantly surprised how lovely this turned out. Was sweet enough for me as is but absolutely Devine sliced, toasted and spread with butter for afternoon tea.

    The dates are what add the sweetnest.  If you are going to remove them then you need to substitute it with something else.  If you add the dates sooner and blitz them, they will be almost unrecognisable and your Son probably won't even know the difference.  My Son says he doesn't like dates but has no idea they are in this bread and happily eats it.

    Great easy to make recipe. I didn't add the dates because my son wouldn't have eaten it with them in but i think i should have just added them because i found the bread a little bland. Maybe my bananas and raspberries weren't sweet enough. II'll make it again over the next few days and add the dates to see the difference.
