Banana Yoghurt Cake with Cream Cheese Icing

Ingredients

Cake mix

  • 150 grams light margarine
  • 226 grams firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 450 grams self-raising flour
  • 1/4 level teaspoon bicarbonate of soda
  • 250 grams Light greek yoghurt
  • 2 Over ripe bananas/large

Cream Cheese Icing

  • 250 grams cream cheese
  • 60 grams icing sugar
  • 60 grams Chopped walnuts

Recipe's preparation

    Cake mix
  1. 1. Preheat oven to 180 C/160 C if fan forced. Grease & double line base and sides  of a 7cm-deep, 19cm square cake pan.

    2. Cream margarine, sugar and vanilla for 20 seconds/speed 4

    3. Add eggs 1 at a time on speed 4.

    4. Add flour, bicarbonate of soda, yoghurt and banana. Mix for 30 seconds/speed 5 until mixture is smooth.

    5.  Pour into prepared cake tin and bake for 1 hour. Cover loosely with aluminium foil if cake is over-browning happens during cooking process.

    6. Cool in the pan for 10 minutes and then turn out onto a cooling rack until completely cooled. 

  2. Cream cheese icing
  3. 1.  Add cream cheese and icing sugar into thermomix and blend 30 seconds/speed 4.

    2. Spread on cake and top with walnuts.

    Great recipe, thank you. I used 160g sugar as I only had vanilla yoghurt. The cake turned out perfectly and was a large size. Mine cooked for 1 hour and 10 minutes and tasted delicious.

    very yum, large cake that rose lots! Mine had a caramel flavour to it (? due to brown sugar). Reminded me of a good version of Cheesecake shop Caramel mud cake tmrc_emoticons.;)

    Really delcious! The yoghurt makes it so moist...I love that I can use up my yoghurt before making a new batch and make a cake with less butter than most. I added an extra banana and halved the sugar. Thanks for sharing - will be making this regularly tmrc_emoticons.) tmrc_emoticons.)

    Delicious and moist! A real hit with the whole family. Thought it was almost a banana mudcake type texture. Will definitely make again!! tmrc_emoticons.) Even passed the test of someone who doesnt like banana!! tmrc_emoticons.;)

    I didn't eat this cake because I didn't make it gluten free (I'll do so next time) but the family's verdict was 41/2 stars! I added the grated rind of a lemon to the icing which added a "zing" to the taste.
