Blueberry banana bread

  • 125 g Butter, chopped
  • 3 Bananas, ripe
  • 2 eggs
  • 1 tsp vanila extract
  • 150 g brown sugar
  • 280 g Self Raising Flour
  • 1 tsp cinnamon
  • 1 cup blueberries

Recipe's preparation

    Method
  1. Preheat oven to 180C. Grease and line base of a 25cm x 11cm loaf pan.

    Place butter into mixing bowl and melt 1 min/90C/speed 4.

    Add bananas, eggs, vanilla, sugar, flour and cinnamon and mix 20 sec/speed 3. Gently stir in blueberries.

    Pour cake mixture into prepared pan and bake 1 hour, or until an inserted skewer comes out clean.

Tip

Blueberry banana bread is best using  ripe or over ripe bananas. Keep over ripe bananas in the freezer and thaw before adding to the recipe.

    Made this to take to work. Halved the sugar and used frozed blueberries (all i had) and it is YUM! I tend to have bad luck when it comes to banana bread so was extremely happy with how it turned out.

    A very nice recipe - if i'm short on bananas, i add pureed apple to make up the balance.  I also cut down on the sugar, about 100g and it still is lovely.  I make them in muffin cases for a kids lunchbox treat and freeze them.  Thanks for the great recipe!
